Butter prawn & pajeri terung

Today, feel like to eat pajeri terung. Second son requested for butter prawn. Here is the result. My first time ever doing pajeri and butter prawn but ate many times before (org lain masak...)



Butter Prawn

Bahan:-

· 12 ekor udang saiz besar

· 2 sudu butter

· 2 biji kuning telur

· sedikit daun kari

· sedikit cili padi

· serbuk kunyit & garam

· minyak utk menggoreng

Cara-Cara:-

1. Lumur serbuk kunyit & garam kat udang. Goreng sehingga masak.

2. Bila udang hampir masak tu, masukkan daun kari & cili padi. Gaul seketika sebelum diangkat. Bila dah masak,ketepikan.

3. Dengan menggunakan minyak yg sama, biarkan minyak dikuali anggaran dlm 1/2 cawan cenggitu.

4. Panaskan minyak dan masukkan butter. Biarkan butter cair & minyak betul2 panas.

5. Sementara tu,kacau2 telur bagi rata dan masukkan telur kuning dalam bekas roti jala.

6. Matikan api bila minyak tu panas2. Dengan menggunakan 2 tangan, tgn kiri pegang telur kuning ..tgn kanan pegang garfu...tuang perlahan2 telur sambil tgn kanan mengacau dlm bentuk pusingan. Biar dia bertali2.

7. Kemudian bila dah selesai, angkat telur tu dah buh dlm tapis utk membuang minyak berlebihan.

Pajeri terung

Bahan-bahannya :
3 biji terung panjang, potong dan belah 2, jangan putus
¼ biji kelapa, dibuat kerisik
¼ biji kelapa parut buat santan 1 cawan
3 sudu besar rempah kari daging
Asam jawa sebesar ibu jari, ambil airnya
1 sudu besar udang kering
Sedikit kayu manis, bunga lwang, cengkih dan buah pelaga (bahan tumis)
2 sudu besar gula
4 ulas bawang merah ]
2 ulas bawang putih ] dikisar
2 cm halia ]
Garam secukup rasa
Minyak untuk menumis

Cara Membuatnya :
1. Panaskan minyak dan tumis bahan tumis beserta bahan kisar. Masukkan rempah kari daging. Kacau hingga wangi.
2. Masukkan udang kering, santan, asam jawa, santan dan terung. Masak hingga terung empuk.
3. Masukkan gula dan garam secukup rasa. Tutup api dan siap untuk dihidangkan.

Kak Teh's Chicken Rice

The last and tastiest one was during last Aidilfitri. We served our visitors with chicken rice. The response were overwhelming, we could see that! Recipe and cooked by my sis. Emm, so yummy I would say, tak tipu punya!

Today, feel like to eat chicken rice but not really like to buy at stall or restaurant. Didn't want to bother my sis to call her for recipe, I google myself via the net. This is the result.

The kids and maid loved it very much. So not bad huh for the first time chicken rice cooker for a 'chief' like me. Could not get the response from husband as he was away at Melaka that time.

Thanks to myresipi.com. I use that as a base but mixed it with my own idea a little bit.
This is the recipe.


Ingredient (4-5 pax)

Untuk rebus

-1/2 ekor ayam dipotong ikut suka besarnya (x potong pun boleh)

- 2 ulas bawang putih ditumbuk

- 2 cm halia yg diketuk

Untuk perap

- 1 sudu besar kicap pekat

- 1 sudu besar sos tiram

- 1 cm halia ditumbuk

- 2 ulas bawang putih ditumbuk

- sedikit kicap cair

Untuk nasi

- 3 cwn beras

- 3 sudu besar butter

- 1 cm halia- ditumbuk

- 4 ulas bawang putih ditumbuk

- air rebusan ayam tadi secukupnya

- sedikit garam

Bahan sos

- 5 biji cili besar merah

- 5 ulas bawang putih

- 2 cm halia

- 1 sudu teh cuka, garam, gula

- 1/2 cawan air

Untuk sup

- lebihan air rebusan ayam

- 1 biji bawang besar kisar

- rempah sup

- garam secukup rasa

- daun sup yg dihiris

Untuk hiasan

- timun

- salad

- tomato

Cara-cara

1. Ayam dipotong ikut suka besarnya (x potong pun boleh). Bersihkan dan dilumur dengan 2 ulas bawang putih yg ditumbuk dan 2 cm halia yg diketuk. Kemudian, rebus hingga empuk.

2. Toskan ayam dan perap dengan bahan-bahan untuk perap selama 15-20 min. Goreng hingga garing.

3. Basuh beras dan toskan. Panaskan butter, tumis halia dan bawang putih hingga garing. Masukkan beras. Terbit bau, masukkan air rebusan ayam secukupnya dan garam. Masak seperti biasa.

4. Untuk sos, kisarkan semua bahan diatas. Boleh ditambah tomato sos/sos cili jika suka. Boleh juga dimasak sebentar (jika suka).

5. Untuk sup, air rebusan ayam dididihkan bersama bawang besar, rempah sup, garam dan daun sup tadi.

My rendang ayam

Yesterday I tried my skill cooking rendang ayam. I’m very choosy when comes to buy or eat rendang ayam since I only eat the one that taste good and so far my sis and cousin’s rendang are the best for me. Last raya when I dropped at my cousin’s house at Kuala Kedah, she served us with rendang ayam. Wow, her rendang was so marvelous I ever taste in my life time. Starting from that, I like rendang but I still would compare with hers when eating at other houses/restaurant. So far, hers is the best. And starting from that, my eldest son love rendang very much and insisted me quite a number of times to cook that. So, where did I go to rely on for best rendang? Not to my cousin yet, but I searched internet and found MyResipi blog. Now, I always refer to this blog for any recipe I want to try and alhamdulillah, menjadiiii.

So last night mommy had the courage to make rendang ayam for the first time of her (my) life and guess what…my sons praised me and told me that it was so delicious while a husband threw a smile. Hence, I’m a pRouD mOm last night. The boys asked to cook again today. Ohh my, can we try other recipes sons?

Forgot to capture that yummy rendang but it look like if not saling tak tumpah seperti ini, but a little bit like this.

Bahan-bahan ( satu family )

· 1 ekor ayam-dipotong ikut suka

Bahan2 digiling:-

@ 10 ulas bawang merah

@ 4 ulas bawang putih

@ 15 biji cili api

@ 15 tangkai cili kering

@ 1 inci halia

@ 1 inci lengkuas

@ 1/2 inci kunyit hidup

2 batang serai dititik

2 helai daun kunyit dihiris halus

4 helai daun limau purut dihiris kasar

4 cawan santan pekat

4 sudu besar kerisik

Garam, gula dan serbuk perasa (ikut suka)

Cara-cara

1. Masukkan ayam dan bahan giling dan serai- perap lebih kurang 1 jam. Sometimes I could not hold to wait for 1 hour, tried just for 20 min, it should be ok then.

2. Masukkan ayam ke dalam kuali. Masukkan santan dan masak hingga mendidih. Masukkan daun limau, daun kunyit, kerisik dan garam. Masukkan juga perasa dan gula jika suka.

3. Masak ayam hingga empuk dan agak pekat. Sedia dimakan dengan pulut kuning atau nasi himpit. Or simply eat that with rice.
